Cookies

This is the classic cookie everyone grew up loving made even healthier.

Ingredients:

  1. Place the coconut oil, sugar, cocoa powder, peanut butter, milk, and salt in a sauce pan. Turn on heat to medium and stir consistently until the mixture smoothens.
  2. Constantly stir the mixture for 5 minutes, making sure to scrape the side and the bottom regularly.
  3. Turn off heat and add vanilla. This will cause the mixture to boil. Make sure to stir it in quickly.
  4. Add the oats, making sure that every piece is coated.
  5. Scoop onto the wax paper into small bite sizes and let it cool before serving.

Chocolate Drops

Ingredients:

  • 1 cup of macadamia nuts or walnuts
  • ¼ cup of dates
  • 1/8 cup of dried coconut
  • 2 cups of chopped nuts
  • ½ cup of lemon juice
  • ½ cup of honey
  • ½ cup of coconut oil
  • 1 tsp of vanilla
  • ¼ tsp of sea salt
  • Fruits of your choice

Instructions:

  1. To prepare the crust, slowly blend the macadamia nuts and the dates into the food processor.
  2. Sprinkle dried coconut onto the bottom of a tart pan. Press crust onto the coconut.
  3. To make the custard, mix cashew, lemon juice, honey, coconut oil, vanilla, and sea salt together.
  4. Pour the mixture onto the crust.
  5. Place in the freezer until moderately firm.
  6. Place fruits of choice and place back in the freezer for about 20 minutes or until firm.
